From the milk on the farm – straight to the table. Over 120 years of tradition
About 120 years ago, Selig Schwartzman arrived in the Bat Shlomo settlement and established his home there. Twenty years later, his family established the famous dairy, and since then they have never stopped producing fine goat, sheep and beef cheeses with love and dedication. The secrets of production have been kept by the family for four generations.
The ancient stone building that has stood in the yard for 120 years gives visitors the experience of stepping back in time. The building serves as a private museum and restaurant, and displays photos, tools, and documents that document farm life and the establishment of the colony.
The secret of the magic lies in the authenticity that has been maintained since the dairy was founded. Ziv, third generation, and his daughters, fourth generation – refuse to switch to modern methods. Every cow receives a caress, every goat a loving pat, and every sheep personal attention.
"As the quality of the milking – so is the quality of the cheese!"
